Why this one
A long, flat edge for long, even cuts.
A kiritsuke is a Japanese chef knife with a long, flat edge and an angled tip. The 21 cm (8.2 in) blade slices, dices and chops vegetables, boneless meat and fish. A hammered finish sits over a Damascus pattern, the handle is rosewood, and it arrives in a gift box.

Common questions
What is a kiritsuke for?
The same jobs as a chef knife: slicing, dicing and chopping vegetables, boneless meat and fish. Keep it off bones, frozen food and shells, which chip a fine edge.
How do I look after it?
Wash it by hand in warm, soapy water and dry it straight away. Do not put it in the dishwasher or leave it to soak.
What comes in the box?
One kiritsuke chef knife, in a gift box.
Kiritsuke or santoku?
The kiritsuke is the longer of the two, with a 21 cm (8.2 in) blade and an angled tip, for longer cuts. The santoku has a 17 cm (6.7 in) blade and suits everyday chopping.
